My
friends, I took great pleasure in writing this book for you as
for so many years you have been faithful to my cuisine and you
have made La Cagouille what it is today.
But it not easy to talk about the book...
It
is not a traditional recipe book because for me "cooking
is more than mere recipes".
A
recipe rarely comes from nothing. Through its history, it is often
located at the crossroads of emotions and memories.
Memories
of tastes and smells, paths formed in the mind through our habit
and desire for what we love, our experiences elsewhere, a table
of friends...
And then there are our travels, the flavour of a fruit by the
roadside, reading words that make your mouth water, the fragrance
of far away markets, the subtle smell of a freshly-caught fish
in a boat gently rocked by the waves...
So
many emotions, meetings, so many moments which have left their
indelible mark on me, training my tastes and inspiring my cuisine.
Is it knowledge? Rather, it is culture, and today I want to share
it with you.
